Die 7 eleganten Konferenzräume des Grand Hotels Minerva mit Tageslicht können 25 bis 80 Personen aufnehmen. Die “Sala Vasari” mit Deckenfresko ist mit einem kleineren Raum für Kaffeepausen verbunden, ausgestattet mit Parkettboden, Glaswänden und Korbsesseln und -sofas. Die ‘Sala Greco’ wurde von Künstlern Indian ink Designs ausgestattet. Die ‘Sala Alberti’ ist mit schwarz-weiß Bildern der Boboli-Gärten dekoriert.

Die Konferenzräume 7 Konferenzräume in denen sich Kunst und Design perfekt mit den Bedürfnissen eines geschäftlichen Meetings verbinden. Alle Konferenzräume sind selbstverständlich sehr hell. Die Einrichtung, die von den Architekten Edoardo Detti and Carlo Scarpa designed wurde, macht sie zu mehr als bloßen Geschäftsräumen. In die Miete jedes Konferenzraumes inkludiert sind: Mineralwasser, Stifte, Papier, flip-chart, Overhead-Projektor, Verstärkersystem. Restaurant « I Chiostri »

Im großräumigen zum Garten gelegenen Restaurant “I Chiostri” mit seinen schönen Malereien und dem Tageslicht, das durch große Glasfenster hereinströmt, finden bis zu 180 Personen Platz. Von April bis Oktober ist auch der Patio auf der Piazza Santa Maria Novella geöffnet,auf der Speisekarte finden sich verschiedenste sommerliche Gerichte. Die gesunde Küche lockt auch viele Florentiner an, ein Standard Restaurant für Gäste, da hier einige der besten tradtionellen mediteranen und toskanischen Gerichte angeboten werden, neu interpretiert von Chef de Cuisine Sandro Pedica, der die klassischen Zutaten auf moderne Weise zubereitet.
